Japanese culture in a bowl.

A simple bowl of ramen can say so much. Visually appealing, beneath the surface is so much more. It is the subtle touches, and the light seasoning, that bring out the true flavors of the soup. This concept, that ramen should be easy to understand, yet hard to tire of, is what Santouka brings.

Kodawari - a balance

Kodawari is the balance of not only flavors, but of visual esthetics and service. It is the obsession over every little aspect of a customers meal. Our little red plum stands out against the pearly soup. Our bowl is shaped slightly smaller than average. Our seasoning is light, letting the natural flavors of our ingredients shine. This attention to detail is our kodawari.

Our signature bowl is mild and creamy. Topped with a Japanese pickled red plum, this bowl really brings out the essential flavors of the pork broth. This is the bowl that started it all.

Shoyu ramen is flavored with a soy sauce based seasoning. The flavor is slightly stronger than the Shio Ramen. Bonito and nori seaweed give our Shoyu Ramen a distinctly Japanese flavor.

A mild, bonito-flavored pork broth is blended with hearty miso paste for our Miso Ramen.

Tender pork jowl is the highlight of our Tokusen Toroniku Ramen. Served separately, the juicy toroniku can be enjoyed by itself or used as a topping on the ramen.

Pickled plum (umeboshi) is our signature topping served with our shio ramen. It has a pleasantly sour taste and light crunchy texture.

Our bamboo shoots (menma) have a light, firm texture. Just a little salt is used as a seasoning, nothing else.

Our Chashu is made from just the right balance of lean and fatty pork. We only use the ribs, simmered slowly for the best taste.

The most premuim cheek meat is used for our toroniku chashu. Only a few ounces can be used from each pig. Many people go so far as to compare it to premium fatty tuna.

OUR SOUP

Tonkotsu soup - the essence of simplicity and deep umami flavors.

To make our signature tonkotsu broth, we simmer pork bones for about 20 hours until it is pearly white. Finally, after such a long, low-temperature cook, we add vegetables, dried fish, kelp, and other savory ingredients. The taste is exceptional, in part because it is never boiled. Touched with lighter-than-average seasoning, we pride ourselves in a bowl that can be drunk down to the last drop.
